Summer Bliss Bowl | Caprese Tortellini with Spinach - This easy salad comes together in minutes and makes the perfect addition to any summer meal.
Bike rides, lazy swims, picnics, BBQs–isn’t summer the best? This summer bliss bowl is comprised of my three great loves–pasta, caprese salad, and spinach. Plus, it’s on the table in no time flat and can feed a small army. Can’t go wrong with that. Loaded with veggies, it is also incredibly satisfying. Best of all, it can be served warm or chilled. The perfect summer meal.

summer pasta, picnic food, easy tortellini
  • 2 packages of tortellini 
  • 1 pint cherry or grape tomatoes
  • 6-8 oz. fresh mozzarella balls
  • handful of fresh basil, sliced thinly
  • a few handfuls of baby spinach
  • 2-3 tablespoons olive oil
  • red pepper flakes
  • salt and pepper

Cook the tortellini according to the package directions. While the pasta is boiling, slice the tomatoes and mozzarella balls in half. Season with a pinch of salt and pepper. Drain the tortellini and stir in the basil and spinach until wilted. Dress the pasta with a drizzle of olive oil, a flurry of red pepper flakes, and salt and pepper. Mix in the caprese salad and serve. Serves 4 generously, 6 as a side salad.
