Today is Warren’s birthday and to celebrate I whipped up a batch of cupcakes inspired by his favorite candy of all time: Lindor White Chocolate Truffles. The man has good taste, am I right? While I love baking from scratch (hello, Samoa Cheesecake Cups), I was a tad short on time so I used a box of vanilla cake mix for the cupcakes, which made these a snap to prepare. 
I jazzed up this pantry staple with a seriously epic homemade white chocolate frosting. It is made all the more awesome with the addition of melted truffles. You heard me. Melted truffles. Decadent and glorious. The birthday boy certainly approved. 

While this cupcake is no ten pound Reese’s cheesecake of birthdays yore, it is the perfect bite-sized treat that made Warren go back for seconds (and thirds). Top everything off with a white chocolate truffle festooned with a glittery little flag and you have a the perfect birthday treat!

WHITE CHOCOLATE TRUFFLE CUPCAKES

If you aren’t the box mix type, or are feeling a little fancy, use your favorite vanilla cupcake recipe (try Simply Perfect Vanilla Cupcakes by Baking A Moment) and add a handful of white chocolate chips to the batter. 

  • batch of vanilla cupcakes with white chocolate chips mixed in
  • 1 stick of butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips, melted
  • 3 Lindor White Chocolate Truffles, melted
  • 1 tablespoon milk
  • sprinkles and truffles for topping

For the White Chocolate Frosting
Adapted from How Sweet It Is

Cream the butter and slowly add the powdered sugar. Add vanilla and whisk until fluffy. Fold in the melted chocolate and truffles and stir until incorporated. Add the milk to thin into the right consistency. Use a 2M tip to swirl on gobs of gorgeous frosting. Top with a truffle and sprinkle liberally.
