Berry Delicious Stuffed French Toast with Greek Yogurt | An easy way to fancy up your brunch menu!
When I was in college, some of my best buds threw an annual Fourth of July Pancake Breakfast. Their house was right along our town’s parade route so they would set up a giant griddle in their drive way, hook up their speakers, and turn their yard into an impromptu party space. This freakishly good Stuffed French Toast with Greek Yogurt and Berries is my little homage to those pancake breakfasts of yore.

I only wish I could serve them to all of you while a dude stands on the roof with his electric guitar sizzling with Jimi Hendrix’s version of the “Star Spangled Banner.”

Now you may already know that I am firmly in the waffle camp (though pancakes–particularly Greek Yogurt Upside Down Pineapple Pancakes–have grown on me) but I think French toast is a close tie for Best Brunch Eats in my waffle-loving heart. Especially if they are stuffed to the gills with cream cheese frosting, lemon curd, (the Greek yogurt makes it healthy, right?) and loads of berries.

I like to wipe a little vegetable oil on the griddle to get the French toast toast that beautiful golden brown but it is a totally optional step. However, those white chocolate chips are pretty much mandatory.

I mean, just look at the stuffed goodness! What takes this stuffed French toast to the next level is the Greek yogurt egg bath. The bread soaks up all that richness and makes it feel decadent–but the Greek yogurt is a healthier substitute for the heavy cream most stuffed French toast uses so you can feel okay about indulging.

As with most things in life, a little lemon zest and lemon curd brightens up the dish. It cuts through the sweetness and adds the perfect amount of zing to the fresh berries and creamy filling. Though I haven’t tried a baked version of this, I bet it would be amazing if you put the stuffed bread in a pan, doused it in the Greek yogurt egg bath, let it sit overnight, and baked it up in the morning. BERRY DELICIOUS STUFFED FRENCH TOAST WITH GREEK YOGURT

 
For the Greek Yogurt Filling
  • 6 oz. plain nonfat Greek yogurt
  • 4 oz. Neufchatel (reduced fat cream cheese)
  • 3/4 cup powdered sugar
  • zest of half a lemon
  • 10 slices Italian bread
  • lemon curd (we use Trader Joe’s brand)
  • sliced strawberries
  • blueberries
  • handful of white chocolate chips
With a hand mixer, blend the Greek yogurt, cream cheese, powdered sugar, and lemon zest until nice and fluffy (about 3 minutes). Set aside. Lay five slices of bread on a baking sheet and place 2 tablespoons of the Greek yogurt filling on each. Spread evenly and add a dollop of lemon curd. Sprinkle with berries and white chocolate chips and place a plain piece of bread on each stack. You should now have five sets of stuffed French toast ready for an egg bath.
For the Greek Yogurt Egg Bath
  • 6 oz. plain nonfat Greek yogurt
  • 3 large eggs
  • 1 tablespoon vanilla
  • zest of half a lemon
Heat a griddle to 300 degrees. Whisk the Greek yogurt, eggs, vanilla, and zest in a pie pan (or other flat pan). Carefully soak each side of the stuffed French toast in the egg bath. Wipe a little vegetable oil on the griddle and then place the battered stuffed French toast on the griddle, cooking each side until golden brown (about 3 minutes per side. If the French toast is browning too quickly, turn the griddle down to 250).
Serve with a dollop of Greek yogurt filling and more fresh berries. Serves 5.
