I don’t know about you, but I am very pro Cobb Salad. Especially in the summer. In fact, the entire time I was in Guatemala, all I wanted was a cobb salad, which is exactly what I made for five straight days when I got home.

While I typically don’t have strong feelings about anything useful–like, say, the crisis in Ukraine–I do happen to have excessively strong feelings about what makes up The Perfect Cobb Salad. First of all–and there are absolutely no exceptions to this rule–The Perfect Cobb Salad must be chopped, i.e. everything must be chopped up into perfectly bite-sized pieces beforehand so you don’t waste a second with formalities such as knives. This is why cherry tomatoes are perfect for this salad.

Second, the corn must be cut fresh off a cob. Frozen corn just doesn’t cut it. I know, snobby. But if you have to be snobby about something, make it this salad. Because when a cobb salad is done right, it is glorious.

Third, don’t skimp on the bacon. Now purists will cringe because this is actually turkey bacon–but one of the requirements for this particular cobb salad is that it has to be healthy enough to eat every single day. Hence, turkey bacon. But I fried it with a little olive oil so it got super duper crispy.
Now here’s the thing that might surprise you: chicken is not required for my version of a Perfect Cobb Salad. Crazy, right? But I make up for it with copious amounts of avocado. For the sake of photo composition, I didn’t chop the eggs or avocado, but you can bet I did right before diving into this mess of goodness. If you do add chicken, which I highly recommend, you won’t regret it.

Finally, let’s talk cheese and dressing. For me, the cheese must be pretty darn ripe, as in Roquefort-ripe. But I know Roquefort is pretty intense so Blue or Gorgonzola will suffice. I used Blue cheese here to match the lovely Greek yogurt Blue Cheese dressing. Because Blue Cheese Dressing is also required. Guys, ranch dressing does not count. It just doesn’t.

  • 4 romaine hearts, chopped into bite-sized pieces (or 1 head of romaine)
  • kosher salt and pepper
  • 4 ears corn, boiled for a few minutes and kernels sliced off
  • 1 pint cherry tomatoes, halved
  • 4-5 hard boiled eggs, diced (I bake a dozen at the beginning of the week for quick snacks–325 degrees for 30 minutes)
  • 6 pieces turkey bacon, cooked and crumbled
  • 2 avocados, diced
  • 1/4 cup blue cheese, for garnish
  • Greek yogurt blue cheese dressing (recipe below)
Put the chopped romaine in a large bowl. Salt and pepper to taste (this helps to counter act the bitterness of the leaves. Add the rest of the ingredients and toss to coat evenly with dressing. Serves a crowd as a side salad, about 4 for a main dish salad.
For the Greek Yogurt Blue Cheese Dressing
Adapted from Skinny Taste
  • 1/2 cup crumbled blue cheese
  • 6 oz. fat free plain Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon light lemon juice
  • 1/8 teaspoon garlic pwoder
  • freshly ground black pepper
Put all of the ingredients in a medium bowl and whisk to combine.
