EASY CHEESY SKILLET CORNBREAD

While I absolutely adore making elaborate get-ups in the kitchen (I’m looking at you, Apple Fritter Monkey Bread), there is something to be said for the classics. Like this Cheesy Skillet Cornbread. I almost didn’t post this recipe because it seems too basic.

But, I tell you, this skillet cornbread will change the way you look at life. It is perfect. Especially since it sports that gorgeous cheesy top!
And don’t even get me started on what the buttery, crispy edge does to me:

Cornbread, much like brownies, is one divisive topic. People swear up and down by their favorite recipe. Some only eat it sweet and cakey. Others go for savory. Me, I’m definitely in the savory camp–and this savory camp is big on cheese and butter. Because what is life, but for cheese and butter?

This cornbread means business. Unlike the delicious Shrimp and Spoonbread Grits of yore, this cornmeal concoction stands tall and can hold its own in the form of a hearty wedge. It has a beautiful crumb that is made even better with the cheddar cheese. It makes any bowl of soup jealous and can be transformed into the most epic panzanella (recipe forthcoming), stuffing, and croutons. It cannot lose on any front.
Unless, of course, you like your cornbread sweet and cakey. And then I just don’t know what I can do for you. Except tell you to give this baby a try. Because when you dunk this gloriously cheesy cornbread into a steaming bowl of–and I’m just spit-balling here–Award Winning Chili Con Carne, your life may never be the same again. And not just because you’re eating said award winning Chili Con Carne.

So, yes, this is an incredibly basic cornbread recipe. But it is also my very favorite, the one that never lets me down no matter how many times I make it. Plus, I have a few Thanksgiving recipes up my sleeve that involve using this very perfect Cheesy Skillet Cornbread, so I wanted to share it first, so you’ll always be able to reference it.
You never know just quite when the cheesy cornbread crouton craving will hit. And when it does, I got your back.

CHEESY SKILLET CORNBREAD

Adapted from Teenie Cakes
2 tablespoons unsalted butter
1 cup all-purpose flour
1 cup yellow cornmeal
1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon dried parsley (or your favorite herb)
1 teaspoon dried thyme (or your favorite herb)
1 1/2 cups low-fat buttermilk
2 large eggs, whisked
1 1/4 cups shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
Preheat oven to 425 degrees. Pop a 9-inch cast iron skillet (or oven-safe skillet) in the oven with the butter to melt it. Meanwhile, whisk the flour, cornmeal, baking soda, salt, parsley, and thyme in a large bowl. Pour in buttermillk and eggs. Use a rubber spatula to combine the dry and wet ingredients. Stir in 1 cup of shredded cheddar.
Remove skillet from oven and tilt it around to make sure the melted butter gets up on the sides of the pan. Pour batter into buttered skillet and sprinkle with Parmesan and the remaining cheddar. Bake for 20-25 minutes, until the top is that beautiful golden brown and a toothpick inserted in the center comes out clean. Cool for at least 15 minutes before cutting. Leftovers make fabulous croutons.
Serve with a bowl of Chili Con Carne!
