PEANUT BUTTER KETTLE CORN WITH WHITE CHOCOLATE

If I had to choose one true (food) love it would have to be, without a single hesitation in the world, popcorn. It is my life blood. Even more than chocolate. More than–dare I say it–pizza. I know, right?

All of which is to say that I am shocked and baffled that I have never shared a popcorn recipe with you dear friends! Which obviously has to be remedied immediately, which brings me to this really dreamy Peanut Butter Kettle Corn with White Chocolate (because you know how I feel about white chocolate).
While you are more than welcome to use store bought kettle corn, it is also super fun to pop a batch or two using a trusty brown paper bag and microwave! Note: it is also a tad dangerous to know just how easy it is to have freshly popped kettle corn whenever you please.
What I love the most about this popcorn is its sweet/salty awesomeness. You’ve got the sweet/salty kettle corn topped with creamy peanut butter, salty peanuts, and put over the top with drizzled white chocolate and a generous handful of chocolate chunks.

 

And please let’s not forget the chopped White Chocolate Reese’s Peanut Butter Cups.

An easy Peanut Butter Kettle Corn recipe sprinkled with white chocolate and peanut butter cups.

Ingredients
  • For the Microwave Kettle Corn (make two batches)
  • brown paper lunch bag
  • ¼ cup white popcorn kernels
  • 1 tablespoon sugar
  • 2 teaspoons vegetable oil
  • ½ teaspoon salt
  • Peanut Butter Topping
  • Adapted from The Kitchn
  • ⅔ cup sugar
  • ½ cup honey
  • ½ cup corn syrup
  • 1 cup peanut butter
  • 1 teaspoon vanilla
  • 4 oz. melted white chocolate (for drizzling)
  • 1 cup semisweet chocolate chunks
  • 1 cup chopped white Reese's peanut butter cups
  • 1 cup dry-roasted peanuts
Instructions
  1. For the Microwave Kettle Corn
  2. Put all the above ingredients in a brown paper bag and shake to combine. Fold the bag over twice and microwave for about 2 minutes, until the popping sound slows down. Carefully remove bag from microwave (it will be super hot) and shake. Let it cool while you make the second batch of kettle corn. Dump both bags in a very large bowl then make the peanut butter topping (recipe below). You can also just use two bags of store bought microwave ketttle corn!
  3. For the Peanut Butter Topping
  4. Put the sugar, honey, and corns syrup in a medium saucepan and bring to a simmer for about two minutes. Remove from heat and stir in peanut butter and vanilla. Pour the peanut butter topping over the kettle corn and use a wooden spoon to coat the popcorn.
  5. Drizzle the melted white chocolate over the popcorn and sprinkle in the chocolate chunks, chopped Reese's, and peanuts. Stir to combine. Let the mix set (until peanut butter topping and almond bark are dry), then use a spoon to break it into chunks. Serve!
Notes
If you are uncomfortable using corn syrup, just sub equal parts honey.
