Lately I’ve been craving Brazilian BBQ like nobody’s business–but not for the reason you would think (that perfect garlic sirloin, AKA paradise). Forget the meat, I want plate after plate of those dreamy fried bananas tossed in cinnamon sugar! But since it’s 9 billion degrees, I decided to cool them down quite a bit, which brings me to these amazing specimens, Brazilian Banana Coconut Popsicles.

I love these popsicles because eating one is like drinking a tall class of creamy horchata whilst eating a plate of amazing fried bananas. And that is a combo I can always get behind (especially if said horchata is coconut flavored)! So to celebrate the fabulousness that is Popsicle Week, I’ll just be over here eating this blissful treat!

Also, I initially imagined putting Brazilian bananas into ice cream and I almost guarantee you’ll see a version of this in ice cream form in the future. You were warned.

Not that there’s anything wrong with a plate of fried bananas but…it’s summer. And muggy. And we all just need to take it down a notch.

(I may or may not have made an extra fried banana to eat while I was making these popsicles. Because I’m an adult and I can do what I want. Which is exactly what Warren once told me when I was pregnant and craving–like craving–oatmeal chocolate chip cookies.)

The craving kept nagging me but it was late and I was lazy (also, deeply pregnant) and thought the mature thing to do would be to not eat oatmeal chocolate chip cookies. So I’m really glad I married Warren because he brought me to my senses by saying, “We are grown ups. We can make cookies whenever we want!”

He’s so wise.

And come to think of it, oatmeal chocolate chip cookies would be a really good popsicle flavor, which is neither here nor there so let’s get back to the business at hand:

Because you’re an adult. And you can make popsicles whenever you want to. And, more importantly, you can drizzle them with chocolate and a generous dusting of crushed vanilla wafers.

Who knew adulting was actually the best?

I feel like I spent so much of my young life yearning to be an adult because they could just eat candy whenever they wanted, or drive wherever they wanted, or stay up however long they the wanted.

But today, friends. Today, eat all the candy you want. And make these popsicles. Because you are a grown up and are allowed. You are allowed to do all the fun things! Let’s just revel in that on this beautiful Friday morning when the weekend* heralds us, bright and open and glorious.

*Because another thing you learn as an adult is how much of your life is just waiting for the weekend to come around.

Brazilian Banana Coconut Popsicles taste just like those amazing fried bananas served at Brazilian steak houses!

  • For the Popsicles
  • 1 can full fat coconut milk
  • 1 can coconut cream (we get ours at Trader Joe's)
  • 1 can sweetened condensed milk
  • 1 teaspoon cinnamon
  • 2 Brazilian Bananas (see below)
  • melted semisweet chocolate for drizzling and crumbled vanilla wafers for garnish (optional)
  • For the Brazilian Bananas
  • 2 tablespoons butter
  • 2 bananas (that are not too ripe)
  • 3 tablespoons sugar
  • ¼ teaspoon cinnamon
  1. To make the Brazilian bananas, melt butter in a large non-stick pan over medium-high heat. Slice bananas in half lengthwise and put face down in the hot pan. Fry for 2 minutes, until browned. Carefully flip and fry for another minute or so. Toss pan fried bananas in sugar and cinnamon and set aside to cool for a few minutes.
  2. Mix all the popsicle ingredients, including cooled Brazilian bananas in a blender (or with an immersion blender in a pitcher). Pour into popsicle mold and freeze for at least 3 hours or overnight. If you want to dress your popsicles up, drizzle frozen ones in melted semi sweet chocolate and dust with vanilla wafer crumbs!
