After watching five whole (brilliant) seasons of Friday Night Lights I should probably be a football expert but, guys, let’s be real: I was only in it for the life coaching (Coach and Tami Taylor, right, y’all?). And Saracen.

Air Popped Popcorn
(Spoiler alert, I have the answer and it’s popcorn. The answer is always popcorn).

Specifically, this crazy wonderful salty sweet explosion in my adopted hometown’s famed football colors.

We have the Almond Bark, coconut, and popcorn representing white; the dried blueberries going for Honolulu Blue; the silver candy balls bringing the glitter; and roasted peanuts and cashews because, hello, they’re just plain delicious!

Mix all that goodness together and you have a snacker’s (or tailgater’s) paradise.

While I’m partial to the simplicity of freshly popped corn sprinkled with salt and parmesan, I can never resist a good old fashioned salty sweet combo. Exhibit A? Peanut Butter Kettle Corn. And let’s not forget Birthday Cake Oreo Popcorn.

The salt cuts the sweetness and makes everything more enjoyable (which always reminds me of the scene in Modern Family where Gloria learns that a pinch of salt in cocoa is miraculous).

Okay, so maybe I watch a lot of TV! I promise I sometimes do other things! Like scour the internet for Tami Taylor quotes!

Sweet and Salty Blueberry Popcorn

Serves: 10 cups
Ingredients
  • ¼ cup popcorn (or 2 bags microwave popcorn, no butter)
  • ½ package Almond Bark
  • 1 package freeze dried blueberries
  • 1 cup honey roasted peanuts
  • ½ cup cashews
  • silver sprinkles (optional)
Instructions
  1. Follow your air popper's instructions to pop ¼ cup kernels (alternatively, put kernels in a brown paper bag, fold the top over twice, and heat in minute intervals until the corn is popped). Put Almond Bark in a glass bowl and melt in minute intervals (should only take 2-2.5 minutes) until melted.
  2. Line a large tray or two baking sheets with parchment paper (or put popcorn in a very large bowl). Drizzle with melted Almond Bark and sprinkle remaining ingredients. Use a wooden spoon to stir the popcorn so everything is evenly coated and toppings are evenly distributed.
