To make the Coconut Simple Syrup, boil water and sugar in a medium pot until sugar has dissolved, stirring every so often. Remove pot from heat and stir in cream of coconut and coconut extract. Pour into a squeeze bottle or small pitcher and refrigerate until cool.
*Variation: To make Vanilla Simple Syrup, follow the above directions but omit cream of coconut and stir in 2 teaspoons pure vanilla extract.
To make the Berry Lime Syrup, put all ingredients in a blender and blend until smooth. Refrigerate until ready to use.
To make a Dirty Diet Coke, fill a glass cup halfway with ice. Pour 1-2 tablespoons Coconut Simple Syrup over the ice, fill glass with Diet Coke, and squeeze a lime wedge in. Stir and top with spent lime.
To make Berry Lime Sprite, follow the above directions but use 3-4 tablespoons Berry Lime Syrup with Sprite.
Dirty up your favorite soda even more by adding a shot of half and half. Or mix and match any kind of fruit puree with simple syrup! One of my favorites is Sprite with Vanilla Simple Syrup and mango puree!
